Thai Yellow Curry with Chicken (แกงกะหรี่ไก่)

Today the weather was meant to be a day-in with good book and a cozy meal, like a bowl of curry.

Another famous Thai curry dish that everyone know is the yellow curry. The classic one is a chicken yellow curry with potato and onion. To many of you, it might look like Massaman curry. But it actually quite different interm of aroma and taste. By the way, Thai yellow curry is the only curry dish that has the actual curry powder in it.😁 

Ingredients: (2 servings)

~ 500 g. chicken, diced

~ 500 ml. coconut milk

~ 400 g. potato, peel and cut to cubes 

~ 1 large onion, cut to cubes

~ 2 tbsp yellow curry paste

~ 1 chicken bouillon cube (optional)

~ 2 tbsp sugar

~ 2 -3 tbsp salt, if you use stock cube as well then use only 2 tbsp of salt    

How to:

✔️ Add about 1/2 cup of creamy part of coconut milk or 100 ml coconut milk and yellow curry paste to the pot. Cook the paste in low heat for 5 mins until it developed yellow(ish) oil on the surface.

✔️ Add chicken, the rest of coconut milk and stock cube to the pot. Once it is boiled, bring the heat down to medium to simmer the chicken for about 20 mins.

✔️ Add the potato to the pot and cook it for another 10 mins.

✔️ Add salt and sugar to seasoning the curry sauce.

✔️ Add onion and cook for another 5 mins. Then turn off the heat.
