Stir Fried Morning Glory Thai Style

Thai stir fried veggie are like western salad that served as part of a meal, together with other dishes. I love eating stir fried morning glory with rice porridge (and 2-3 other dishes too😁). Visually, it might look as a plain veggie dish. But I can guarantee you that once you had tried it, you won’t stop thinking about it. 😉

Sometime a good wok dish doesn’t need that variety of seasonings. Using only simple and few seasonings can taste better than you might though. Morning glory is an ideal veggie to stir fried because it would still be crunchy after cooked, and it would soak nicely in the sauces which make it super tasty.

Ingredients:

~ a bunch of morning glory

~ 3-4 cloves garlic, roughly crushed

~ 2-3 fresh chili, roughly crushed

~ 1 tbsp oyster sauce

~ 1 tbsp fermented soy bean paste (optional)

~ 1 tbsp fish sauce (2 tbsp if you don’t use soybean paste)

~ 1 tsp sugar

~ 2 tbsp cooking oil

How to:

✔️ Wash and cut the morning glory to 1 1/2 inch long and move it into a bowl. 

✔️ Add garlic, chili and all the seasonings on top of the morning glory.

✔️ Heat up a pan until it is very hot. Add cooking oil, then add those you had prepared in a bowl into the pan

✔️ stir fried it quickly until the morning glory is cook, then turn off the heat.
