Simple Stir fried Japanese eggplants with mince pork and Thai basil
Last night when we wanted to make a quick dinner from ingredients that we had in our fridge, we ended up making a wok dish (again๐). I like the purple Japanese eggplant a lot because it has a thinner skin than a regular eggplant and the flesh is sweeter. This dish is a Thai version of a stir fried eggplant. It has a sweet and creaminess taste of cooked eggplants, together with salty seasoned minced pork and a fresh aroma from Thai basil.
