Stir-fried Chicken Cashew Nuts

There are 2 versions of stir-fried chicken cashew nuts in Thailand. One is with fried flour coated chicken (similar to the Kung Pao chicken). And another style is to just stir-fried the chicken in the wok.

I prefer the one with fried flour coated chicken more because the chicken soaked up the better and has more taste in it.

Ingredients (2 servings)

Fried flour coated chicken

~ 500 g. chicken, cut to bite size (I used chicken thigh)

~ 1 tbsp salt

~ 1 tsp grounded pepper

~ 1 cup flour

~ cooking oil for frying

The rest

~ 1 cup roasted cashew nuts

~ 1 large onion, large diced

~ 1 bell pepper, large diced

~ 2 scallions, large diced 

~ 4 dried large chili

~ 3 cloves garlic, minced

~ 3 tbsp oyster sauce 

~ 3 tbsp soya sauce

~ 1 tbsp sesame oil

~ 1 1/2 tbsp sugar

~ 3 tbsp cooking for stir-fried

How to:

Prep the ingredients 

✔️Heat up cooking oil in a pan (or a wok, or a small pot so you won’t need to use too much oil). While waiting for the oil to heat up, seasoning the chicken with salt and pepper, and lightly coated it with flour. 

✔️Once the oil is heated, add the flour coated chicken to the pan. Fry it in medium high heat until golden brown and set aside.

✔️Low down the heat in frying pan to fry dried large chili. When the oil is cooling down a bit, add dried large chili into the pan. Stir while counting to 5, or until the dried chili is puffed up, then set it aside. Once it’s cooled down, cut into large dices.

✔️Mix all the seasonings (oyster sauce, soya sauce, sugar and sesame oil) in a small bowl.

Stir-fried chicken cashew nuts

✔️Heat up cooking oil in a pan. Add minced garlic to the pan and saute until golden brown.

✔️Add onion into the pan and sauté until it is lightly transparent.

✔️Add the fried chicken, roasted cashew nuts and diced bell pepper into the pan first, then follow by the seasoning mix. Stir everything together until the sauce is reduced and coated the chicken.

✔️Add fried dried chili and diced scallions into the pan. Quickly stir for 3-4 times, then turn the heat off.
