Purple sweet potato dumpling in sweet coconut milk (Bua Loi บัวลอย)🍠🥥 How does this dessert taste like? My Aussie friend described it as nice, and creamy, and chewy similar to boba bubbles in the bubble tea (but less chewy). And he said it taste like breakfast to him too.😆 But if you asked me, I would always say “it tastes like heaven!”.😉😋🥰 Ingredients: (2-3 servings)
- 120 g. glutinous rice powder (for the dumpling)
- 1 tbsp glutinous rice powder (for coating)
- 120 g. mashed purple sweet potato
- 100 ml. water
- 500 ml. coconut milk
- 50 g. sugar
- 1/2 tsp salt 📣Cooking Tips📣
🍠 Peel the skin of sweet potato off first before steaming. Steam until soft so it is easy to mash.
🍠You can use varity of vegetables and fruits to make the dumpling, e.g. normal sweet potato, pumkin, butternut squash, berries, etc. If you are using mashed/blended fruits that are very liquid like, then you should replace the water with the fruit.
