Fried Eggs in Tamarind sauce

Fried Eggs in Tamarind sauce (ไข่ลูกเขย) 🍳🥚
There are 2 versions of this dish, one is boiled egg fried and another with just the fried eggs. I had made the boiled egg fried version, because it is an original version for this dish.😋🥚🍳
Ingredients:
- 10 hard boiled eggs (or less, but the tamarind sauce is enough for 10 eggs)
- 5 large shallots
- 10 dried chilies - 1 bunch coriander - 500 ml. cooking oil (oil types that are high heat resistant, canola oil, sunflower oil, corn oil, etc.)
- 2 tbsp tamarind paste / lime juice (but it will be much better to use tamarind paste)
- 250 g. palm sugar / sugar
- 2tbsp fish sauce
- 100 ml. water
📣Cooking Tips📣
🥚 Dry the boiled eggs properly before frying. And don’t fry the eggs for too long. Otherwise the eggs will be chewy and overcooked inside.
🥚Leave the sliced shallots to air a bit before frying. It will be easier to fry
🥚The chilli is fast to fry. So you better keep closer look on it.
