Poach Eggs & Avocado with Japanese Sesame Dressing

During my BD last month, I had been invited by my friends to so many brunches to celebrate my big round birthday. And I had tasted so many great dishes that I I want to try to replicate them in my kitchen. 

On the top of my list is this simple poach eggs and avocado that came with Japanese sesame dressing and served with rye crispbread / crackers. It was such a great pairing. The nutty and sweet sesame dressing add a good round taste to the overall dish. And it is very simple to make. So I really want to urge you to try it too.

To make a perfect poached egg, I found a VDO on YouTube by Downshifttology that explain how to make one. I followed her method and it worked so perfect!🥚😍

Japanese sesame dressing is not that difficult to make. But there are also plenty off the shelf in the supermarket. I topped the eggs with cress, which is a great garnish for eggs, and sprinkled with roasted sesame and salt & pepper. However, I used store bought rye crackers though😅. 

Japanese Sesame Dressing

Ingredients:

~ 3 tbsp roasted white sesame 

~ 2 tbsp Japanese soy sauce

~ 2 tbsp vinegar 

~ 2 tbsp mayonnaise 

~ 1 tsp Mirin 

~ 1/2 tsp sesame oil 

How to:

✔️ First, grind the roasted white sesame in a mortar until very smooth. 

✔️Then combine all the ingredients in a bowl and whisk well until everything are combined together.
