Grilled Squids with Spicy Seafood Dip
This dish is a tribute to my homesickness. Every year, I would go back to Thailand at least once a year. And in some years, more than 3 - 5 times a year. But because of the locked down, I think it will be over a year until I could go back there again. ☹️
There are so many foods in my “MUST EAT” list when going back home. One of it is seafood. I mean kilos of supper fresh and of all types of seafood, cooked as per order. And grilled squid with Thai seafood dip is always included in my order. 😁
Ingredients:
To clean the squids
~ A handful of salt
~ 2 cups vinegar
~ soda water
Squids marinate
~ 2 large squids
~ 4 tbsp dark soy sauce
~ 1 tbsp turmeric powder
~ 500 ml. water
Dip
~ 3 tbsp lime juice
~ fresh chili, minced
~ 2 tbsp garlic, minced
~ 1 whole pickle garlic, minced (optional)
~ 3-5 coriander roots (optional) / 5 stems coriander, minced
~ 1 tbsp fish sauce
~ 1/2 tbsp palm sugar / sugar / cooking syrup
~ 1/2 tbsp salt
How to:
✔️ Clean the squids by rubbing it first with salt, then vinegar. And soak it in soda water for 20 mins.
✔️ Mix the seasonings for marinade together and marinate the squids for 30 mins.
✔️ Grilled the squids on high heat. Keep turning it to cook both side evenly, but not too long to over cooked it.
✔️ Prepare the dip by mixing everything together in a blender (or mince by hand), and serve it with the grilled squids.
