Grilled Japanese Eggplants with Thai Spicy Dressing

On my birthday, my hubby took me to a Japanese restaurant that serve Japanese food Omakase style. It was soooo good and so inspiring. And I was thinking 🤔 .... If one day I am going to do something with a similar concept but serving Thai inspired cuisine, what would the menu be???
