Gai Yang - Thai Marinated Grill Chicken with Tamarind Dip

Ready for BBQ season? 🍗🔥
Here is the recipe for a flavorful grill chicken with a homemade dip. Oh and don’t forget a bowl of steamed sticky rice!😃 🍗Ingredients:

Grill Chicken
~ 1 whole chicken, free range chicken is the best

Chicken Marinade
~ 3 coriander roots / a handful of coriander / 1tbsp coriander seed
~ 1 whole garlic
~ 1 tbsp grounded pepper
~ 1 lemongrass ~ 1 tbsp cumin powder / 1thumb fresh cumin
~ 2 tbsp oyster sauce
~ 2 tbsp seasoning sauce (Maggie)
~ 1 tbsp sugar
~ 1/2 cup cream (optional)

Tamarind Dip
~ 1/2 cup tamarind sauce
~ 1/2 cup fish sauce
~ 4 tbsp sugar / palm sugar
~ 1 tsp chili powder (depends on your spice level)
~ 1/2 cup water

How to:

Grill Chicken
✔️ Butterfly the chicken
✔️ Prepare the chicken marinade. You can blend it all in a blender or crush the fresh ingredients in a mortar and then mix in the liquid ingredients.
✔️ Marinate the chicken for at least 4 hours
✔️ Grill the chicken on a grill, bone side down first, use a medium low heat for about 30-40 mins. Then turn the chicken over, skin side down, medium heat for 30-40 mins.
✔️ Rest the chicken for 5 mins before cut the chicken up into pieces.

Tamarind Dip
✔️ Mix all the ingredients (except chili powder) in saucepan/small pot and boil it in medium high heat for about 15-20 mins, until the sauce is reduced a bit and become thicker. Once the sauce is cool down, add chili powder.
