Crispy Noodle in Tamarind and Kumquat Caramel Sauce with King Prawns

Let’s move on to the dish no. 7th in my chef selection series, Crispy noodle in tamarind and kumquat sauce and pepper garlic king prawns.

The crispy noodle is coated with sweet and sour caramel sauce that mainly made from tamarind, kumquat and palm sugar. It’s also mixed with crispy eggs, bean sprout and Chinese shives, then topped with pepper garlic king prawns.    

This is not a common dish that you will find in most restaurants in Thailand because there are so many steps in the preparation for this dish. Therefore, this dish is quite a delicacy in Thai cuisine. However, you can find a similar crispy noodle, but just with the tamarind caramel sauce almost every where in Thailand.
