Crispy Mushroom Omelette

Have you ever had Oyster/Mussel Omelette?🦪🍳
Today I felt like no meat dinner. So I made this crispy mushroom omelette for myself and another one with shrimp and mushroom for my family. I actually like to use Shiitake mushroom and King Oyster mushroom (Eryngii mushroom) more than the actual oyster that they normally use for this dish. I think these mushrooms give a nice little crunchy touch and a lighter feeling to the dish.
