Thai Noodle Soup with Beef

Have you ever try different types of Thai noodle soup?
I love noodle soup. Sometime I really miss being in Thailand to binge on all kinds of noodle soup. We have a great varieties of noodle soup in Thailand. And I am not talking only about Ramen, Pho or Chinese noodle soups. I mean a real Thai noodle soup types, such as Yen Ta Fo, Tom Yum noodle, Thai noodle soup with beef/pork/chicken/duck/fish/seafood, etc. Heaven!🥰😋

Thai noodle soup with beef is one of my favorite type of the noodle soup that you can easily find out there. And it is quite simple to make it yourself too. You just need a flavorful chunk of meat like belly or shanks, bones type of any kind and some herbs and veggies to throw into a pot. Then let it simmer for at least 2 hours. And you will get a great soup and very tender meat to for your noodle soup.

Ingredients for beef soup:

~ 1 kg of beef shanks or belly 

~ 300 - 500 g. bones of any kind 

~ 1 whole garlic

~ 1 tbsp whole pepper

~ 300 g. soup veggies (onion, carrot, Chinese radish, scallion, leak, etc.)

~ optional spice (star anise, cinnamon, or Chinese 5 spices)

~ 3 tbsp seasoning sauce (Maggie) 

~ 4 tbsp soya sauce 

~ 1/2 cup salt

~ 4 tbsp sugar

~ water to cover everything in the pot

How to make the beef soup:

✔️ Add everything to the pot except seasonings, bring it to boil and turn down the heat and add the seasonings. 

✔️ Simmer the beef soup for at least 2 hours. Skimming the foam as necessary. 

Noodle and condiments:

~ noodle of your choice

~ fried garlic oil (roughly chopped garlic and fry it in oil with medium heat until golden brown) 

~ veggie of your choice, poached (bean sprouts, bok choi, cabbage, etc.)

~ fresh coriander and spring onion for garnish

~ grounded pepper
