Stir-fried Seafood With Thai Red Curry

This is another classic street food, wok food, in Thailand. This type of food is considered a one dish wonder which consists of rice, stir-fried of protein with veggies in different types of sauce and fried eggs.

Beside cooking it with coconut milk, red curry is often used in a stir-fried dishes. We call red curry stir-fried dish “Pad Prik Gaeng”. 😊

Ingredients: (1 serving)

~ 150 g. seafood of your choice

~ 2 tbsp Thai red curry

~ 2 tbsp cooking oil

~ 100 g. green beans

~ 2 kaffir lime leaves, remove the stem and torn into large pieces

~ 1 large red chili, sliced 

~ 2 tbsp fish sauce 

~ 1 tsp sugar

~ 3 tbsp stock / water

  

How to:

✔️ Heat up the pan in medium heat, add cooking oil and red curry paste. Stir for 2 mins.

✔️ Add seafood to the pan and stir until it is almost cooked.

✔️ Add all the seasoning, stock and green beans to the pan. Stir until the green beans is cooked.

✔️Add kaffir lime leaves and chili, then stir and turn off the heat.

    

Tips and Tricks:

🤓 Red curry paste ususally already salty. So you should add 1 tbsp fish sauce at a time and taste it first before adding the 2nd spoon.
