Spaghetti Aglio e Olioe plus Anchovies with a Thai Touch

Another #quarantinefood that I can guarantee you will love it. 🥰 I often make this one when I don’t have much in the fridge. 🧀 Ingredients (serve 2)
~ 300 g. dried spaghetti ~ 3 tbsp olive oil
~ 4-5 large anchovies in oil
~ 6 large garlic cloves, fine sliced
~ 3 dried whole chili
~ 2 tbsp fish sauce
~ 1 tbsp salt
~ 1-2 cup grated Parmesan cheese (the more the merrier)
~ lime or lemon

How to:
✔️ Bring water to boil, add dried spaghetti and salt to the pot. Boil the spaghetti for 8 mins (or as per instructions on the package) and properly drain with cold water.
✔️ While boiling the spaghetti, fry garlic and chili in a pan with oil, medium heat, and put it aside in a small bowl
✔️ Add anchovies to the pan and fry with medium heat until the anchovies is melted apart. Turn off the heat to wait for the spaghetti to cook
✔️ Once the spaghetti is cooked, turn on the heat again. When the pan is hot, add fish sauce to the pan first then add cooked spaghetti after. ✔️Toss spaghetti around to make sure it is well coated with the melted anchovies oil. Then add garlic and chili to the spaghetti (crack fried chili with hand before add it back to the pan). Toss the spaghetti a few times to mix everything together. ✔️Add 3/4 cup of grated Parmesan cheese to the pan. Toss the spaghetti around and turn off the heat.
✔️ Serve immediately with squeezed of lime/lemon juice on the spaghetti and top with the rest of grated Parmesan cheese.
