Drunken Noodle With Shrimp

There is a say in Thai that drunken people make tasty(and very spicy) food. Therefore the Drunken stir fried dish is usually a very flavorful dish that packed with loads of chilies and herbs with strong aroma.

This Thai fried noodle seem to be more famous outside of Thailand than in Thailand. And it has been recreated into so many versions. The recipe I made today is more like the original version with same aroma and taste, similar to the one that you would get in Thailand.😊

Ingredients (1 serving*):

~ 150 g. fresh wide rice noodle

~ 150 g. shrimp

~ 2 tbsp cooking oil

~ 3 large cloves garlic (minced)

~ 150-200 g. of your choice of veggies (Chinese kale, broccolini, broccoli, baby corn, carrot, cauliflower, snap peas, etc.)

~ fresh Thai chilies (crushed)

~ fresh large chili pepper (sliced)

~ 1 cup of Thai holy basil leaves

~ 3 kaffir lime leaves (optional)

~ 3 stems of fresh peppercorns (optional)

Seasonings:

~ 2 tbsp fish sauce

~ 1 tbsp seasoning sauce or light soya sauce

~ 2 tbsp oyster sauce

~ 1/2 tbsp dark soya sauce (optional for darkening the color)

~ 1 tbsp sugar

How to:

✔️ Heat up the pan, add cooking oil. Add minced garlic into the pan, sauté the garlic with medium heat until golden brown.

✔️ Add shrimps into the pan and fry with high heat until semi cooked.

✔️ Add veggies into the pan and sauté it quickly in high heat.

✔️ Add noodles and seasonings into the pan and mix everything together.

✔️ Once the noodle is cooked, add chilies, chili peppers, holy basil, kaffir lime leaves and fresh peppercorns into the pan. Sauté everything together and turn off the heat.

Tips and Tricks:

🤓 *I prefer to cook stir-fried noodle dishes 1 portion at a time, for a better taste and a better result.

🤓 For an even better taste and better aroma, sauté the noodle with 1 tsp of oil in a very hot pan/wok first and set it aside. It will give this nice wok fried aroma to the noodle.
